Jay Pierce’s Pork Tenderloin
What you’ll need…
- 1 Trimmed Pork Tenderloin 2-3 lbs
- 1 small onion, sliced
- ½ cup sliced carrots
- 1 cup potatoes cut up in 1 inch size pieces
- 1/2 tsp garlic salt
- ½ tsp cracked black pepper
- 4 ounces Pierce’s Original BBQ Sauce. (Honey Sauce if you like it a little sweet)
What you’ll do…
Place the pork tenderloin in a baking dish and add onions, carrots, potatoes to the pan around the meat.
Top the tenderloin with the Pierce’s Original BBQ Sauce and cover the baking dish loosely with foil.
You may want to pierce the foil with a knife to allow steam out during cooking.
Place in a 350 degree oven for 45 minutes to one hour.
When internal temperature of the meat reaches 145 degrees, remove from oven and allow it to sit for 5 minutes.
Slice pork and serve with vegetables.
This dish goes well served over wild or whole grain rice. For a little extra kick, add a dash of Pierce’s Hot Sauce!
