Looking for a way to “Jazz Up” a quiet night at home, or be the hit at the neighbor’s Super Bowl party? Maybe you want to keep the feeling of the annual Williamsburg Winter Blues Jazz Fest alive all year long.
Look no further than this “Speakeasy” Martini recipe, created by Cat Keller and served at Waypoint Seafood and Grill in the Quarterpath Crossing shopping center (next to Harris Teeter and across from Kingsmill).

- 1 ½ cup Honey
- 1/2 cup Water
- 1/4 cup Fresh Squeezed Lemon Juice
- 1/8 cup Fresh Squeezed Orange Juice

- 1 oz Champagne
- 1 Wedge Fresh Lemon
- ½ of 1 Wedge Fresh Orange
- Lemon Twist
- Orange Twist
- Raspberries
What you’ll do:
For the Handmade Citrus Honey Syrup:
In a small saucepan, combine honey, water, lemon juice, orange juice, lemon zest and orange zest. Cook over medium heat stirring occasionally until boiling. Continue to low boil until the mixture is reduced by a fourth. Let cool and refrigerate, use when chilled.
Last step:
Muddle lemon & orange wedges in shaker tin, fill shaker with ice, add Beefeater’s Summer Gin, and citrus honey syrup. Shake very hard. Strain into chilled martini glass and top with champagne. Coat several raspberries with citrus honey syrup and skewer with cocktail pic or float them in martini. Add a twist of lemon and orange. Enjoy!
